  • 56.0 g Seitan, vital wheat gluten based, raw
  • 49.2 g Rice noodle, dried, straight
  • 189.4 g Snow peas, fresh, trimmed
  • 30.3 g Scallions, sliced thinly
  • 1.1 g Sesame oil, toasted
  • 0.7 tsp Galangal powder
  • 0.9 tbsp Rice vinegar
Method
  1. 01Bring a pot of water to a boil, turn off heat, and soak the rice noodles for 6-8 minutes until flexible but al dente. Drain and rinse with cool water.
  2. 02Heat a wok or heavy-bottomed skillet over high heat. Add the seitan, sliced into thin strips, and sear until golden brown and slightly crispy, about 4 minutes.
  3. 03Add the snow peas and scallions to the pan. Toss vigorously for 2 minutes; the peas should remain bright green and snap-tender.
  4. 04Lower the heat and add the drained noodles, tossing to incorporate.
  5. 05Sprinkle the galangal powder evenly over the mixture, add the toasted sesame oil and rice vinegar, and stir-fry for another 60 seconds until fragrant and glossy.
  6. 06Plate immediately in a shallow bowl, ensuring the crispy seitan is visible atop the vibrant green peas and noodles.
