Stir-Fried Seitan and Snow Pea 'Lo Mein' with Toasted Sesame and Galangal

Ingredients
- 56.0 g Seitan, vital wheat gluten based, raw
- 49.2 g Rice noodle, dried, straight
- 189.4 g Snow peas, fresh, trimmed
- 30.3 g Scallions, sliced thinly
- 1.1 g Sesame oil, toasted
- 0.7 tsp Galangal powder
- 0.9 tbsp Rice vinegar
Method
- 01Bring a pot of water to a boil, turn off heat, and soak the rice noodles for 6-8 minutes until flexible but al dente. Drain and rinse with cool water.
- 02Heat a wok or heavy-bottomed skillet over high heat. Add the seitan, sliced into thin strips, and sear until golden brown and slightly crispy, about 4 minutes.
- 03Add the snow peas and scallions to the pan. Toss vigorously for 2 minutes; the peas should remain bright green and snap-tender.
- 04Lower the heat and add the drained noodles, tossing to incorporate.
- 05Sprinkle the galangal powder evenly over the mixture, add the toasted sesame oil and rice vinegar, and stir-fry for another 60 seconds until fragrant and glossy.
- 06Plate immediately in a shallow bowl, ensuring the crispy seitan is visible atop the vibrant green peas and noodles.
