Levantine Pan-Seared Halloumi and White Bean 'Gigantes' Skillet with Za'atar and Shallot

Ingredients
- 40 g halloumi cheese
- 160 g canned white beans
- 100 g grape tomatoes
- 30 g shallots
- 1 tbsp extra-virgin olive oil
- 1 tbsp za'atar spice blend
- 1 tsp lemon juice
- 0.25 tsp salt
Method
- 01Heat half of the extra-virgin olive oil in a heavy skillet over medium-high heat. Add the sliced halloumi and sear for 2-3 minutes per side until deeply golden and crispy. Transfer halloumi to a plate.
- 02Add the remaining olive oil and minced shallots to the skillet. Cook over medium heat for 2 minutes until translucent and soft.
- 03Add the halved grape tomatoes and salt, cooking for 3-4 minutes until they begin to burst and release their juices into a jammy sauce.
- 04Fold in the drained white beans and 2 teaspoons of the za'atar spice blend. Stir gently to heat through for 2-3 minutes.
- 05Arrange the crispy seared halloumi slices back on top of the warm bean mixture.
- 06Drizzle fresh lemon juice over the top and sprinkle with the remaining teaspoon of za'atar. Serve immediately hot in the skillet.
