Ingredients
  • 40 g halloumi cheese
  • 160 g canned white beans
  • 100 g grape tomatoes
  • 30 g shallots
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp za'atar spice blend
  • 1 tsp lemon juice
  • 0.25 tsp salt
Method
  1. 01Heat half of the extra-virgin olive oil in a heavy skillet over medium-high heat. Add the sliced halloumi and sear for 2-3 minutes per side until deeply golden and crispy. Transfer halloumi to a plate.
  2. 02Add the remaining olive oil and minced shallots to the skillet. Cook over medium heat for 2 minutes until translucent and soft.
  3. 03Add the halved grape tomatoes and salt, cooking for 3-4 minutes until they begin to burst and release their juices into a jammy sauce.
  4. 04Fold in the drained white beans and 2 teaspoons of the za'atar spice blend. Stir gently to heat through for 2-3 minutes.
  5. 05Arrange the crispy seared halloumi slices back on top of the warm bean mixture.
  6. 06Drizzle fresh lemon juice over the top and sprinkle with the remaining teaspoon of za'atar. Serve immediately hot in the skillet.
