Ingredients
- 135 g grass-fed ground beef
- 230 g sweet potato
- 100 g kale
- 50 g yellow onion
- 10 g garlic
- 2 g extra-virgin olive oil
- 5 g Cajun seasoning
- 0.25 tsp salt
- 0.25 tsp black pepper
- 1 tbsp water
Method
- 01Heat extra-virgin olive oil in a heavy cast-iron skillet over medium-high heat.
- 02Add the diced sweet potatoes and cook, stirring occasionally, for 10 to 12 minutes until tender and crispy golden brown. Transfer to a plate and set aside.
- 03Add ground beef to the same hot skillet. Break up with a spatula and cook until browned, reaching an internal temperature of 160°F (71°C), about 5 to 6 minutes.
- 04Stir in the diced yellow onion and minced garlic, sautéing for 3 minutes until onions turn translucent and fragrant.
- 05Return sweet potatoes to the skillet. Sprinkle Cajun seasoning, salt, and black pepper over the dish, tossing well to coat and allowing a crust to form for 2 minutes.
- 06Add chopped kale and a tablespoon of water. Cover skillet with a lid for 1 minute to wilt the kale until bright green.
- 07Remove from heat and serve hot directly from the skillet.
