Moroccan Spiced Chicken Skewers with Almond-Apricot Relish

Ingredients
- 4 oz (113 g) Boneless, skinless chicken breast
- 1 tbsp Olive oil
- 1/2 tsp Ground cumin
- 1/4 tsp Ground cinnamon
- 1/8 tsp Ground turmeric
- 1/4 tsp Salt
- 1/8 tsp Black pepper
- 2 tbsp (15 g) Dried apricots, finely chopped
- 1 tbsp (8 g) Blanched slivered almonds, roughly chopped
- 1 tbsp Fresh cilantro, chopped
- 1 tsp Lemon juice
Method
- 01Cut the chicken breast into 1-inch cubes. In a bowl, toss the chicken with 1/2 tbsp olive oil, cumin, cinnamon, turmeric, salt, and pepper. Let marinate for at least 10 minutes.
- 02While the chicken marinates, prepare the relish. In a small bowl, combine the finely chopped dried apricots, roughly chopped slivered almonds, chopped cilantro, and lemon juice. Stir in the remaining 1/2 tbsp olive oil. Set aside.
- 03Thread the marinated chicken cubes onto skewers (if using wooden skewers, soak them in water for 30 minutes prior to use to prevent burning).
- 04Heat a grill pan or outdoor grill to medium-high heat. Grill the chicken skewers for 3-4 minutes per side, or until cooked through and slightly charred.
- 05Serve the grilled chicken skewers immediately, topped with the almond-apricot relish.
