Ingredients
  • 4 oz (113 g) Boneless, skinless chicken breast
  • 1 tbsp Olive oil
  • 1/2 tsp Ground cumin
  • 1/4 tsp Ground cinnamon
  • 1/8 tsp Ground turmeric
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper
  • 2 tbsp (15 g) Dried apricots, finely chopped
  • 1 tbsp (8 g) Blanched slivered almonds, roughly chopped
  • 1 tbsp Fresh cilantro, chopped
  • 1 tsp Lemon juice
Method
  1. 01Cut the chicken breast into 1-inch cubes. In a bowl, toss the chicken with 1/2 tbsp olive oil, cumin, cinnamon, turmeric, salt, and pepper. Let marinate for at least 10 minutes.
  2. 02While the chicken marinates, prepare the relish. In a small bowl, combine the finely chopped dried apricots, roughly chopped slivered almonds, chopped cilantro, and lemon juice. Stir in the remaining 1/2 tbsp olive oil. Set aside.
  3. 03Thread the marinated chicken cubes onto skewers (if using wooden skewers, soak them in water for 30 minutes prior to use to prevent burning).
  4. 04Heat a grill pan or outdoor grill to medium-high heat. Grill the chicken skewers for 3-4 minutes per side, or until cooked through and slightly charred.
  5. 05Serve the grilled chicken skewers immediately, topped with the almond-apricot relish.
