Ingredients
  • 58.4 g chicken thigh
  • 137.4 g sweet potato
  • 200 g kale
  • 178 g yellow onion
  • 61 g garlic
  • 1 tbsp extra-virgin olive oil
  • 0.2 tsp garam masala
  • 0.5 tsp ground turmeric
  • 0.5 tsp salt
Method
  1. 01Heat extra virgin olive oil in a heavy skillet over medium-high heat.
  2. 02Add diced chicken thigh pieces and cook for 6-8 minutes, turning until skin renders, turns crisp and golden brown, and chicken reaches internal temperature of 165°F (74°C). Remove chicken and set aside.
  3. 03In same pan with remaining fat, add diced yellow onion and sweet potato. Sauté for 10-12 minutes, stirring occasionally, until sweet potatoes are tender and browned at edges.
  4. 04Add minced garlic, garam masala, and ground turmeric. Bloom spices in oil for 1 minute until fragrant.
  5. 05Return cooked chicken to skillet, add torn kale and 2 tbsp water. Cover and steam for 2 minutes until kale is vibrant green and wilted.
  6. 06Season hash with salt, toss well, and serve hot in a wide breakfast bowl.
