Method
- 01Cut chicken breast into 1-inch cubes. Season with salt, black pepper, and cayenne pepper.
- 02Heat canola oil in a deep skillet over medium heat. Add onion and garlic, sautéing for 2 minutes until fragrant.
- 03Add chicken cubes and sear until golden on all sides, about 5 minutes.
- 04Pour in tomato puree and 1/2 cup water, bringing the mixture to a simmer.
- 05Whisk in peanut butter until completely smooth and integrated into a rich sauce.
- 06Reduce heat to low, cover, and braise for 8-10 minutes until chicken reaches an internal temperature of 165°F (74°C) and the sauce thickens.
