Steamed Turkey and Spinach Parcels with Ginger-Soy Glaze

Ingredients
- 137.1 g ground turkey
- 88.9 g spinach
- 1 tsp fresh ginger
- 29.2 g peanut butter
- 8.9 g honey
- 0.6 tbsp soy sauce
- 0.5 tsp sesame seeds
- 130.4 g long-grain white rice
Method
- 01In a bowl, mix ground turkey with minced ginger, 1 tsp of soy sauce, and half of the finely chopped spinach. Form into bite-sized meatballs.
- 02Line a bamboo steamer with whole spinach leaves. Place the turkey parcels on top, leaving space between each.
- 03Steam over boiling water for 10-12 minutes until cooked through and the internal temperature reaches 160°F (71°C).
- 04Whisk peanut butter, honey, remaining soy sauce, and 1 tsp warm water together until emulsified into a smooth glaze.
- 05Spoon warm cooked white rice into a bowl, top with steamed turkey parcels, drizzle with glaze, and garnish with remaining spinach leaves and sesame seeds.
- 06Cook the turkey until the turkey reaches an internal temperature of 165°F (74°C) in its thickest part before serving.
