  • 70.9 g chicken thigh
  • 1 tsp olive oil
  • 80 g yellow onion
  • 2 clove garlic
  • 1 tsp ginger
  • 1 tsp ground cumin
  • 0.25 tsp cayenne pepper
  • 0.5 cup diced tomatoes
  • 0.4523 cup peanut butter
  • 1 cup vegetable broth
  • 80 g sweet potato
  • 0.25 tsp table salt
  • 78.1 g millet
Method
  1. 01Heat olive oil in a pot over medium heat. Add chopped yellow onion and cook for 5 to 7 minutes until softened and translucent.
  2. 02Add minced garlic and grated ginger, cooking for 1 minute until fragrant. Stir in ground cumin and cayenne pepper for 30 seconds.
  3. 03Add diced tomatoes, chicken thigh pieces, and vegetable broth. Whisk in peanut butter until smoothly incorporated. Bring to a boil.
  4. 04Reduce heat to low, stir in sweet potato, cover, and simmer for 20 to 25 minutes until sweet potato is tender and chicken reaches a safe internal temperature of 165°F (74°C) with no pink remaining.
  5. 05Season with salt. Serve hot over freshly steamed millet.
