Ingredients
- 70.9 g chicken thigh
- 1 tsp olive oil
- 80 g yellow onion
- 2 clove garlic
- 1 tsp ginger
- 1 tsp ground cumin
- 0.25 tsp cayenne pepper
- 0.5 cup diced tomatoes
- 0.4523 cup peanut butter
- 1 cup vegetable broth
- 80 g sweet potato
- 0.25 tsp table salt
- 78.1 g millet
Method
- 01Heat olive oil in a pot over medium heat. Add chopped yellow onion and cook for 5 to 7 minutes until softened and translucent.
- 02Add minced garlic and grated ginger, cooking for 1 minute until fragrant. Stir in ground cumin and cayenne pepper for 30 seconds.
- 03Add diced tomatoes, chicken thigh pieces, and vegetable broth. Whisk in peanut butter until smoothly incorporated. Bring to a boil.
- 04Reduce heat to low, stir in sweet potato, cover, and simmer for 20 to 25 minutes until sweet potato is tender and chicken reaches a safe internal temperature of 165°F (74°C) with no pink remaining.
- 05Season with salt. Serve hot over freshly steamed millet.
