- 02Grease a traditional scallop-shell Madeleine tin lightly with a touch of butter or non-stick spray.
- 03In a mixing bowl, combine the finely ground oat flour and almond meal; these provide the structural base that mimics the delicate crumb of a traditional tea cake while maintaining our nutritional profile.
- 04In a separate bowl, whisk the egg whites until they reach soft, glossy peaks—this aeration is key to the characteristic 'hump' of the Madeleine.
- 05Gently fold the dry ingredients into the egg whites using a rubber spatula, taking care not to deflate the mixture.
