Method
  1. 01Preheat your oven to 375 deg F (190 deg C).
  2. 02Grease a traditional scallop-shell Madeleine tin lightly with a touch of butter or non-stick spray.
  3. 03In a mixing bowl, combine the finely ground oat flour and almond meal; these provide the structural base that mimics the delicate crumb of a traditional tea cake while maintaining our nutritional profile.
  4. 04In a separate bowl, whisk the egg whites until they reach soft, glossy peaks—this aeration is key to the characteristic 'hump' of the Madeleine.
  5. 05Gently fold the dry ingredients into the egg whites using a rubber spatula, taking care not to deflate the mixture.
  6. 06Add a tablespoon of fresh lemon zest to brighten the batter.
  7. 07Spoon the mixture into the shell molds, filling each about three-quarters full.
  8. 08Bake for 8–10 minutes, or until the cakes are set, lightly golden at the edges, and spring back when touched.
  9. 09Let them cool in the pan for two minutes before turning them out onto a wire rack.
  10. 10Serve warm, perhaps alongside a cup of Earl Grey tea, enjoying the delicate, crisp exterior and tender, aromatic interior.
