Classic Southern Smothered Grass-Fed Beef with Wilted Tuscan Kale and Sweet Potato Mash

Ingredients
- 214.2 g sweet potato
- 0.0571 tbsp salted butter
- 127.9 g ground beef
- 750 g Tuscan kale
- 50 g yellow onion
- 5 clove garlic
- 0.2 tsp Cajun seasoning
- 1.1338 cup beef broth
- 0.25 tsp salt
Method
- 01Place peeled, cubed sweet potatoes in a pot of cold salted water. Bring to a boil and cook for 15 minutes until fork-tender. Drain, stir in salted butter, and mash until smooth.
- 02While potatoes cook, heat a skillet over medium-high heat. Add ground beef and minced garlic, breaking it up with a spoon, and cook for 6 to 8 minutes until browned with crisp edges and fully cooked to an internal temperature of 160°F (71°C).
- 03Add diced yellow onion and Cajun seasoning to the skillet with the beef, sautéing for 3 to 4 minutes until onion is translucent.
- 04Add chopped Tuscan kale and beef broth to the skillet. Cover and steam for 3 minutes, then uncover and sauté until kale is wilted and liquid is reduced, about 2 minutes. Season with salt as needed.
- 05Spoon sweet potato mash onto a plate and top with the smothered ground beef and kale mixture.
