- 103.6 g sweet potato
- 31.1 g spinach
- 25.9 g yellow onion
- 5.2 g garlic
- 1.5786 tbsp olive oil
- 0.75 cup water
- 1 tsp smoked paprika
- 1 tbsp lime juice
- 0.25 tsp salt
- 0.25 tsp black pepper
Method
- 01In advance, soak the dried black beans overnight in water, then boil for 45 to 60 minutes until tender and drain.
- 02In a heavy-bottomed pot, heat 1 tbsp of olive oil over medium heat. Add finely diced yellow onion and sauté until translucent, about 5 minutes.
- 03Add minced garlic and smoked paprika to the pot, stirring for 1 minute until highly aromatic.
- 04Add cubed sweet potatoes and water; bring to a simmer, cover, and cook until tender, about 15 minutes.
- 05Gently stir in the tender cooked black beans, salt, and black pepper. Simmer uncovered for 3 to 5 minutes to combine flavors.
- 06Remove from heat and fold in the fresh spinach, allowing it to wilt in the residual heat for 1 minute.
- 07Drizzle with the remaining 0.5 tbsp of olive oil and squeeze fresh lime juice over the top before serving hot.
