Ingredients
  • 170 g atlantic salmon fillet
  • 1 tsp fresh ginger
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 150 g broccoli
  • 1 tbsp extra virgin olive oil
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • 150 g white rice
  • 1 tsp toasted sesame oil
  • 1 tsp lime juice
  • 1 tsp toasted sesame seeds
Method
  1. 01Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
  2. 02In a small bowl, whisk together the grated ginger, soy sauce, and honey. Place the salmon fillet on one side of the sheet pan and brush generously with the glaze.
  3. 03Toss the broccoli florets with olive oil, salt, and black pepper. Spread them evenly on the other side of the sheet pan.
  4. 04Roast in the oven for 12-15 minutes until the salmon reaches an internal temperature of 145°F (63°C), flaking easily with a fork, and the broccoli is tender-crisp with charred tips.
  5. 05While roasting, warm the cooked white rice in a pan with a splash of water, stirring in toasted sesame oil until hot and fragrant.
  6. 06Plate the warm sesame rice in a bowl, top with the glazed salmon and charred broccoli, and finish with a squeeze of fresh lime juice and toasted sesame seeds.
