Ginger-Glazed Atlantic Salmon with Toasted Sesame Rice and Charred Broccoli

Ingredients
- 170 g atlantic salmon fillet
- 1 tsp fresh ginger
- 1 tbsp soy sauce
- 1 tsp honey
- 150 g broccoli
- 1 tbsp extra virgin olive oil
- 0.25 tsp salt
- 0.125 tsp black pepper
- 150 g white rice
- 1 tsp toasted sesame oil
- 1 tsp lime juice
- 1 tsp toasted sesame seeds
Method
- 01Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
- 02In a small bowl, whisk together the grated ginger, soy sauce, and honey. Place the salmon fillet on one side of the sheet pan and brush generously with the glaze.
- 03Toss the broccoli florets with olive oil, salt, and black pepper. Spread them evenly on the other side of the sheet pan.
- 04Roast in the oven for 12-15 minutes until the salmon reaches an internal temperature of 145°F (63°C), flaking easily with a fork, and the broccoli is tender-crisp with charred tips.
- 05While roasting, warm the cooked white rice in a pan with a splash of water, stirring in toasted sesame oil until hot and fragrant.
- 06Plate the warm sesame rice in a bowl, top with the glazed salmon and charred broccoli, and finish with a squeeze of fresh lime juice and toasted sesame seeds.
