  • 3 oz canned light tuna in olive oil
  • 2 oz green beans
  • 2 oz potato
  • 1 each egg
  • 0.5 cup cherry tomatoes
  • 4 each Kalamata olives
  • 2 tbsp red onion
  • 1 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • 2 tbsp fresh basil
Method
  1. 01Place quartered red potatoes in a small pot of salted water. Bring to a boil and cook for 12-15 minutes until tender when pierced with a fork. Drain and let cool.
  2. 02In a separate pot of boiling salted water, blanch green beans for 3-4 minutes until crisp-tender. Immediately transfer to ice water to shock, then drain well.
  3. 03Place egg in boiling water for 10 minutes until hard-boiled, then peel, quarter, and ensure egg whites are firm and yolk is set (reaching 160°F/71°C internal temperature).
  4. 04Whisk extra virgin olive oil, red wine vinegar, Dijon mustard, salt, and black pepper together in a small bowl until emulsified.
  5. 05Arrange green beans, potatoes, cherry tomatoes, flaked drained tuna, hard-boiled egg quarters, Kalamata olives, and sliced red onion on a serving plate. Drizzle with vinaigrette and garnish with torn fresh basil.
