Toasted Soba Noodles with Miso-Sesame Dressing and Crispy Scallions

Ingredients
- 0.8571 oz soba noodles
- 1.5722 tbsp white miso paste
- 1 tsp toasted sesame oil
- 1 tsp rice vinegar
- 1 tsp tamari soy sauce
- 2 each scallions
- 1 tsp canola oil
- 0.5 tsp toasted sesame seeds
Method
- 011. Bring a pot of water to a boil. Add the soba noodles and cook according to package instructions until tender, about 4-5 minutes. Drain well and rinse under cold water to stop cooking; set aside.
- 022. In a small bowl, whisk together the white miso paste, toasted sesame oil, rice vinegar, and tamari soy sauce until smooth. Add 1 teaspoon of warm water if needed to loosen the dressing.
- 033. Heat canola oil in a small skillet over medium-high heat. Add the thinly sliced scallions and cook, stirring frequently, until golden and crispy, about 3 minutes. Transfer with a slotted spoon to a paper-towel-lined plate.
