  • 40 g Atlantic salmon fillet
  • 85 g quinoa
  • 25 g spinach
  • 1 tsp low-sodium soy sauce
  • 1 tsp lemon juice
  • 2 g ginger root
  • 0.5 tsp sesame oil
  • 2.5 g slivered almonds
Method
  1. 01Ensure Atlantic salmon fillet was previously frozen for parasite control and intended for raw consumption. Using a sharp knife, slice salmon into thin sashimi-style strips.
  2. 02In a small bowl, whisk together low-sodium soy sauce, lemon juice, grated ginger, and sesame oil to form dressing.
  3. 03Add room-temperature cooked quinoa and chiffonade spinach to bowl with dressing. Toss gently until leaves start to soften.
  4. 04Transfer seasoned quinoa and spinach base to a serving bowl. Top with sashimi-style salmon slices and sprinkle toasted slivered almonds over top. Serve immediately while cool.
