Ingredients
- 40 g Atlantic salmon fillet
- 85 g quinoa
- 25 g spinach
- 1 tsp low-sodium soy sauce
- 1 tsp lemon juice
- 2 g ginger root
- 0.5 tsp sesame oil
- 2.5 g slivered almonds
Method
- 01Ensure Atlantic salmon fillet was previously frozen for parasite control and intended for raw consumption. Using a sharp knife, slice salmon into thin sashimi-style strips.
- 02In a small bowl, whisk together low-sodium soy sauce, lemon juice, grated ginger, and sesame oil to form dressing.
- 03Add room-temperature cooked quinoa and chiffonade spinach to bowl with dressing. Toss gently until leaves start to soften.
- 04Transfer seasoned quinoa and spinach base to a serving bowl. Top with sashimi-style salmon slices and sprinkle toasted slivered almonds over top. Serve immediately while cool.
