Ingredients
- 86.6 g Halloumi cheese, sliced
- 80.2 g Peas, green, split, mature seeds, raw
- 12.0 g Chile, jalapeño, sliced
- 6.6 g Coriander seeds, crushed
- 4.0 g Turmeric root, freshly grated
Method
- 01Rinse split peas thoroughly and boil in 2 cups of water with the grated turmeric root until tender and creamy, about 25-30 minutes. The texture should be thick and porridge-like.
- 02While the peas simmer, heat a small non-stick pan over medium-high heat. Add the halloumi slices and sear until golden brown and crisp on both sides, about 2 minutes per side. Remove and set aside.
- 03In the same pan, quickly blister the jalapeño slices for 30 seconds until charred at the edges.
- 04Stir the crushed coriander seeds into the warm split pea mash.
- 05To serve, spoon the fragrant turmeric-infused split peas into a shallow bowl. Arrange the golden halloumi slices on top and garnish with the charred jalapeño slices. The dish should be aromatic, savory, and provide a satisfying textural contrast between the creamy pulses and squeaky, salty cheese.
