Ingredients
- 21.4 g ATLANTIC SALMON PRIME FILLET
- 100.4 g Arugula, raw
- 56.9 g Broccoli, raw
Method
- 01Prepare a steamer basket over a pot of rapidly boiling water.
- 02Season the salmon fillet with a pinch of sea salt and place into the basket, covering tightly.
- 03Steam for 4-5 minutes until the fish is opaque and flakes easily with a fork; the aroma should be clean and fresh.
- 04Meanwhile, lightly blanch the broccoli florets in the same steam basket until bright green and tender-crisp.
- 05In a small bowl, combine finely minced scallions and fresh ginger.
- 06Place the arugula in a wide bowl and quickly toss with the residual heat of the broccoli to just barely wilt the leaves.
- 07Arrange the salmon and vegetables over the bed of arugula, topping the fish with the ginger-scallion mixture.
- 08Serve immediately while warm, ensuring the natural oils of the salmon dress the greens.
