Cajun-Style Beef and Sweet Potato Hash with Wilted Spinach

Ingredients
- 138.3 g ground beef
- 240 g sweet potato
- 212.1 g spinach
- 25 g yellow onion
- 0.1087 tsp olive oil
- 1 tbsp Cajun seasoning
- 0.25 tsp salt
- 0.125 tsp black pepper
Method
- 01Heat a cast-iron skillet over medium-high heat with olive oil. Add diced sweet potatoes and sauté for 10–12 minutes, stirring occasionally, until browned and tender.
- 02Transfer cooked sweet potatoes out of the skillet.
- 03Add raw ground beef and diced onion to the hot skillet. Cook breaking apart with a spoon for 5–6 minutes until beef is browned and reaches an internal temperature of 160°F (71°C).
- 04Add Cajun seasoning to the rendered fat and cook for 1 minute until fragrant.
- 05Return sweet potatoes to skillet, add fresh spinach, salt, and black pepper, and toss for 1–2 minutes until spinach is fully wilted.
- 06Transfer hash to a dish and serve hot.
