Ingredients

- 108.9 g sweet onion
- 103.8 g celery
- 1 tsp extra-virgin olive oil
- 65.3 g watermelon juice
- 0.7 tsp chili powder
- 0.25 tsp salt
- 4 each butter lettuce
- 0.5 tsp lime zest
Method
- 01Finely mince raw turkey thigh meat. Dice the sweet onion and celery into small, uniform pieces.
- 02Heat extra-virgin olive oil in a non-stick skillet over medium-high heat. Add the minced turkey and cook for 5 to 6 minutes, breaking it up with a spoon, until fully browned and cooked through to an internal temperature of 165°F (74°C).
- 03Add the diced sweet onion and celery to the skillet with the turkey. Lower heat slightly and sauté for 5 to 7 minutes until the vegetables are tender and translucent.
- 04Stir in chili powder and salt, cooking for 1 minute until fragrant. Pour in the watermelon juice to deglaze the skillet, stirring until reduced to a light, glossy glaze that coats the turkey and vegetable mixture.
- 05Spoon the turkey picadillo mixture into fresh, washed butter lettuce leaves and garnish with freshly grated lime zest.
