Seitan and Ras el Hanout Spiced Watercress Salad with Toasted Sesame

Ingredients
- 48.6 g seitan
- 4.5 g olive oil
- 1 tsp ras el hanout spice blend
- 65 g taro root
- 100 g watercress
- 20 g fennel bulb
- 1 tsp lemon juice
- 0.125 tsp salt
- 1.025 tbsp sesame seeds
Method
- 01Peel the raw taro root and steam over boiling water for 15 minutes until fork-tender. Allow to cool slightly, then dice into small bite-sized cubes.
- 02Using a mandoline or chef's knife, shaved the raw fennel bulb into delicate slivers.
- 03In a non-stick skillet over medium-high heat, add the olive oil, seitan chunks, and Ras el Hanout. Sauté for 3-4 minutes, tossing until edges are golden, crisp, and aromatic.
- 04In a mixing bowl, toss the trimmed fresh watercress with shaved fennel, diced cooked taro, freshly squeezed lemon juice, and salt.
- 05Transfer tossed salad greens to a serving dish. Top with warm, spiced seitan and sprinkle toasted sesame seeds over top. Serve immediately.
