Indian-Spiced Paneer and Vegetable Skewers

Ingredients
- 60 g paneer cheese
- 50 g red bell pepper
- 50 g green bell pepper
- 40 g yellow onion
- 1 tsp extra-virgin olive oil
- 0.25 tsp ground turmeric
- 0.25 tsp ground cumin
- 0.25 tsp chili powder
- 0.25 tsp ground coriander
- 0.5 tsp lemon zest
- 0.25 tsp salt
- 20 g quinoa
- 1 tsp lemon juice
- 2 sprig cilantro
Method
- 01Rinse the quinoa and simmer in 50 ml water for 12 minutes until tender and liquid is absorbed; set aside.
- 02In a bowl, mix ground turmeric, ground cumin, chili powder, ground coriander, lemon zest, salt, and extra-virgin olive oil to form a marinade.
- 03Add the paneer cubes, red bell pepper, green bell pepper, and yellow onion chunks to the spice marinade and toss until evenly coated.
- 04Thread alternating pieces of paneer, bell peppers, and onion onto small bamboo skewers.
- 05Heat a non-stick grill pan over medium-high heat. Sear skewers for 2-3 minutes per side until paneer is golden brown and vegetables show light char marks.
- 06Fluff cooked quinoa with a fork and spread onto a serving plate. Place skewers over quinoa and finish with fresh lemon juice and chopped cilantro.
