  • 60 g paneer cheese
  • 50 g red bell pepper
  • 50 g green bell pepper
  • 40 g yellow onion
  • 1 tsp extra-virgin olive oil
  • 0.25 tsp ground turmeric
  • 0.25 tsp ground cumin
  • 0.25 tsp chili powder
  • 0.25 tsp ground coriander
  • 0.5 tsp lemon zest
  • 0.25 tsp salt
  • 20 g quinoa
  • 1 tsp lemon juice
  • 2 sprig cilantro
Method
  1. 01Rinse the quinoa and simmer in 50 ml water for 12 minutes until tender and liquid is absorbed; set aside.
  2. 02In a bowl, mix ground turmeric, ground cumin, chili powder, ground coriander, lemon zest, salt, and extra-virgin olive oil to form a marinade.
  3. 03Add the paneer cubes, red bell pepper, green bell pepper, and yellow onion chunks to the spice marinade and toss until evenly coated.
  4. 04Thread alternating pieces of paneer, bell peppers, and onion onto small bamboo skewers.
  5. 05Heat a non-stick grill pan over medium-high heat. Sear skewers for 2-3 minutes per side until paneer is golden brown and vegetables show light char marks.
  6. 06Fluff cooked quinoa with a fork and spread onto a serving plate. Place skewers over quinoa and finish with fresh lemon juice and chopped cilantro.
