  • 80.7 g chicken thigh
  • 267.5 g sweet potato
  • 66.9 g yellow onion
  • 6.7 g garlic
  • 133.7 g spinach
  • 0.7857 tbsp avocado oil
  • 1 tsp garam masala
  • 0.5 tsp ground turmeric
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 sprig cilantro
Method
  1. 01Dice chicken thighs into 1/2-inch pieces and season with salt, pepper, turmeric, and half of the garam masala. Peel sweet potato and cut into 1/4-inch cubes.
  2. 02Heat avocado oil in a large skillet over medium-high heat. Add chicken pieces and cook, stirring occasionally, for 6-8 minutes until deeply browned and internal temperature reaches at least 165°F (74°C). Transfer chicken to a plate.
  3. 03In the same skillet, add sweet potato cubes. Cover and cook over medium heat for 5-7 minutes, stirring once, until tender and caramelized at the edges.
  4. 04Stir in diced onion, minced garlic, and remaining garam masala. Sauté for 3 minutes until onions are translucent and fragrant.
  5. 05Return cooked chicken to the skillet, fold in fresh spinach, and toss for 1-2 minutes until spinach is just wilted.
  6. 06Adjust seasoning with salt and pepper. Plate hash hot and garnish with fresh chopped cilantro if desired.
