Ingredients
  • 80 g long-grain brown rice
  • 1.5 cup water
  • 129.9 g grass-fed ground beef
  • 150 g Brussels sprouts
  • 50 g yellow onion
  • 10 g garlic
  • 10 g Cajun seasoning
  • 1 tsp olive oil
  • 0.25 tsp salt
Method
  1. 01Rinse long-grain brown rice thoroughly under cold water. Combine rice with water in a pot, bring to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes until tender and liquid is absorbed.
  2. 02Trim and halve Brussels sprouts. Finely dice yellow onion and mince garlic.
  3. 03Heat olive oil in a heavy skillet over medium-high heat. Add grass-fed ground beef and cook for 6-8 minutes, breaking up with a spoon, until browned and cooked to a safe temperature of 160°F (71°C).
  4. 04Add diced onion and Brussels sprouts to skillet with beef. Sauté for 6-8 minutes until sprouts are charred and tender.
  5. 05Stir in minced garlic, Cajun seasoning, and salt, tossing for 1 minute until fragrant.
  6. 06Fluff brown rice with a fork and place in a bowl. Top with hot beef and Brussels sprout skillet.
  7. 07Cook the beef until the beef reaches an internal temperature of 160°F (71°C) in its thickest part before serving.
