  • 61.5 g fava beans
  • 82 g sweet potato
  • 0.5 each yellow onion
  • 1 clove garlic
  • 0.8857 tbsp extra-virgin olive oil
  • 1 tsp Cajun seasoning
  • 0.25 tsp salt
  • 1 tbsp pumpkin seeds
Method
  1. 01Place raw fava beans in a steamer basket over boiling water and steam for 10-12 minutes until tender. Peel skins if tough.
  2. 02In a separate saucepan, boil sweet potato cubes in lightly salted water for 12 minutes until fork-tender. Drain well and mash smooth.
  3. 03Heat 2 teaspoons olive oil in a skillet over medium heat. Add diced yellow onion and minced garlic; cook for 4 minutes until soft and translucent.
  4. 04Add the Cajun seasoning to the onion mixture and bloom in the oil for 30 seconds until aromatic.
  5. 05Combine the steamed fava beans and mashed sweet potato in the skillet. Lightly crush some fava beans with a fork to fold everything into a textured mash.
  6. 06Season with salt to taste. Transfer to a serving bowl, drizzle with the remaining 1 teaspoon olive oil, and garnish with toasted pumpkin seeds.
