Caribbean-Spiced Fava Bean and Sweet Potato Mash with Toasted Pepitas

Ingredients
- 61.5 g fava beans
- 82 g sweet potato
- 0.5 each yellow onion
- 1 clove garlic
- 0.8857 tbsp extra-virgin olive oil
- 1 tsp Cajun seasoning
- 0.25 tsp salt
- 1 tbsp pumpkin seeds
Method
- 01Place raw fava beans in a steamer basket over boiling water and steam for 10-12 minutes until tender. Peel skins if tough.
- 02In a separate saucepan, boil sweet potato cubes in lightly salted water for 12 minutes until fork-tender. Drain well and mash smooth.
- 03Heat 2 teaspoons olive oil in a skillet over medium heat. Add diced yellow onion and minced garlic; cook for 4 minutes until soft and translucent.
- 04Add the Cajun seasoning to the onion mixture and bloom in the oil for 30 seconds until aromatic.
- 05Combine the steamed fava beans and mashed sweet potato in the skillet. Lightly crush some fava beans with a fork to fold everything into a textured mash.
- 06Season with salt to taste. Transfer to a serving bowl, drizzle with the remaining 1 teaspoon olive oil, and garnish with toasted pumpkin seeds.
