Riz a Djej (Lebanese Spiced Rice with Chicken, Toasted Almonds, and Cinnamon)

Ingredients
- 128.5 g chicken breast
- 1 tsp olive oil
- 0.5 tsp baharat spice blend
- 0.25 tsp ground cinnamon
- 0.5 tsp salt
- 0.25 tsp black pepper
- 42.6 g long grain white rice
- 105.7 g spinach
- 31.3 g almonds
- 24.4 g pomegranate molasses
Method
- 01Cook long grain white rice in a small pot with 120 ml water and a pinch of salt until tender and fluffy.
- 02Season the chicken breast with salt, black pepper, cinnamon, and baharat spice blend.
- 03Heat olive oil in a skillet over medium heat. Sauté chicken for 6-8 minutes per side until cooked through and internal temperature reaches 165°F (74°C). Transfer to a plate to rest for 5 minutes, then shred into bite-sized pieces.
- 04In the same skillet, add fresh spinach with 1 tbsp water and a pinch of salt; cook over medium heat for 2 minutes until wilted.
- 05In a separate small dry skillet over medium-low heat, toast sliced almonds for 2-3 minutes until golden brown and fragrant, stirring constantly.
- 06To serve, place warm cooked rice in a serving bowl, top with wilted spinach and shredded chicken, drizzle with pomegranate molasses, and sprinkle toasted sliced almonds over top.
