Sinaing na Seitan sa Gata (Seitan simmered in coconut milk with garlic rice)

Ingredients
- 283.3 g seitan
- 0.1 cup coconut milk
- 128.2 g Swiss chard
- 22.8 g extra virgin olive oil
- 2 clove garlic
- 6.4 g fresh ginger
- 0.25 tsp salt
- 85.4 g jasmine and wild rice blend
Method
- 01Rinse the 85.4g jasmine and wild rice blend, combine with water, and cook until tender and fluffy.
- 02Heat half of the extra virgin olive oil (11.4g) in a pan over medium heat. Add half of the minced garlic (3.2g) and sauté until golden and fragrant, about 1 minute.
- 03Add the cooked rice to the garlic oil and toss to coat thoroughly; keep warm.
- 04In a separate skillet, heat the remaining 11.4g of extra virgin olive oil over medium-high heat. Add the seitan chunks and sear until golden brown and crispy on the edges, about 4-5 minutes.
- 05Add the remaining minced garlic (3.2g) and the 6.4g minced ginger to the seitan, stirring constantly for 1 minute until fragrant.
- 06Pour in the coconut milk and bring to a gentle simmer for 3 minutes until slightly thickened.
- 07Stir in the sliced Swiss chard and season with salt. Cover for 2 minutes until the leaves are wilted but bright green.
- 08Mound the warm garlic rice into a serving bowl, top with the seitan and coconut milk mixture, and serve immediately.
