  • 4 oz ground lamb
  • 0.5 cup lentils
  • 0.25 cup yellow onion
  • 1 clove garlic
  • 0.5 tsp ginger
  • 0.5 tsp cumin seeds
  • 0.5 tsp coriander seeds
  • 0.25 tsp ground turmeric
  • 0.125 tsp cayenne pepper
  • 1 tbsp tomato paste
  • 0.5 cup tomatoes
  • 0.25 cup coconut milk
  • 0.25 tsp salt
  • 1 tsp olive oil
Method
  1. 01In a bowl, mix ground lamb, cooked green lentils, half the finely chopped yellow onion, minced garlic, grated ginger, half of the ground cumin, coriander, turmeric, cayenne, and half the salt with half of the olive oil. Form into 8-10 small oval koftas.
  2. 02Heat the remaining olive oil in a skillet over medium-high heat. Sear koftas for 2-3 minutes per side until evenly browned. Remove and set aside.
  3. 03Add the remaining yellow onion to the skillet and sauté for 3-4 minutes until softened. Stir in tomato paste and cook 1 minute until fragrant.
  4. 04Add diced tomatoes, coconut milk, remaining spices, and remaining salt. Stir well and bring to a simmer.
  5. 05Return koftas to the skillet, cover, reduce heat to low, and simmer 10-12 minutes until cooked through (internal temperature reaches 160°F/71°C) and sauce thickens.
  6. 06Garnish with fresh cilantro before serving.
  7. 07Cook the lamb until the lamb reaches an internal temperature of 160°F (71°C) in its thickest part before serving.
