  • 218.0 g Ground Turkey (as lean base for Embutido)
  • 153.4 g White long-grain rice, cooked
  • 36.8 g Carrot, finely diced
  • 27.6 g Raisins
  • 15.3 g Sweet pickle relish
  • 122.7 g Spinach, wilted
Method
  1. 01In a large bowl, mix the ground turkey, finely diced carrots, raisins, and sweet pickle relish. Season generously with salt, pepper, and a dash of soy sauce.
  2. 02Shape the mixture into a tight log, rolling it in aluminum foil to seal it firmly.
  3. 03Steam the log over boiling water for 45 minutes until firm to the touch and fully cooked through.
  4. 04While the meatloaf steams, sauté the spinach in a pan until just wilted.
  5. 05Once the Embutido is finished, let it rest for 10 minutes before unwrapping to ensure it holds its shape when sliced.
