  • 272.8 g chicken thigh
  • 5 g cajun seasoning
  • 184.6 g brussels sprouts
  • 1 tbsp olive oil
  • 5 g garlic
  • 250 g sweet potato
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Method
  1. 01Preheat oven to 400°F (200°C).
  2. 02Place peeled and cubed sweet potatoes into a pot of cold salted water. Bring to a boil and cook for 12 minutes until fork-tender. Drain, mash thoroughly, and season with salt and ground black pepper.
  3. 03Toss halved brussels sprouts and chicken thighs with olive oil, minced garlic, cajun seasoning, and a pinch of salt.
  4. 04Arrange chicken thighs and brussels sprouts in a single uncrowded layer in a heavy cast-iron skillet.
  5. 05Bake in the oven for 20-25 minutes until the chicken reaches an internal safe temperature of 165°F (74°C) on an instant-read thermometer and brussels sprouts are deeply charred and crisp at the edges.
  6. 06To serve, spread warm sweet potato mash on the base of the dish, lay roasted chicken thighs over top, and place charred brussels sprouts alongside.
