Cajun-Style Skillet Roasted Chicken Thighs with Charred Brussels Sprouts and Sweet Potato Mash

Ingredients
- 272.8 g chicken thigh
- 5 g cajun seasoning
- 184.6 g brussels sprouts
- 1 tbsp olive oil
- 5 g garlic
- 250 g sweet potato
- 0.5 tsp salt
- 0.25 tsp black pepper
Method
- 01Preheat oven to 400°F (200°C).
- 02Place peeled and cubed sweet potatoes into a pot of cold salted water. Bring to a boil and cook for 12 minutes until fork-tender. Drain, mash thoroughly, and season with salt and ground black pepper.
- 03Toss halved brussels sprouts and chicken thighs with olive oil, minced garlic, cajun seasoning, and a pinch of salt.
- 04Arrange chicken thighs and brussels sprouts in a single uncrowded layer in a heavy cast-iron skillet.
- 05Bake in the oven for 20-25 minutes until the chicken reaches an internal safe temperature of 165°F (74°C) on an instant-read thermometer and brussels sprouts are deeply charred and crisp at the edges.
- 06To serve, spread warm sweet potato mash on the base of the dish, lay roasted chicken thighs over top, and place charred brussels sprouts alongside.
