  • 242.9 g sweet potato
  • 225.1 g ground turkey
  • 97.1 g spinach
  • 29.1 g green bell pepper
  • 5.7 g olive oil
  • 0.5 tsp smoked paprika
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 11.4 g slivered almonds
Method
  1. 01Preheat oven to 400°F (200°C). Pierce sweet potato several times with a fork and roast on a baking sheet for 45-50 minutes until tender throughout when pierced with a knife.
  2. 02Heat olive oil in a skillet over medium-high heat. Add ground turkey and diced green bell pepper. Sauté, breaking up meat, until turkey reaches an internal temperature of 165°F (74°C) and is no longer pink, about 8-10 minutes.
  3. 03Fold in fresh spinach, smoked paprika, salt, and cracked black pepper. Cook for 1-2 minutes until spinach is wilted.
  4. 04Slice roasted sweet potato lengthwise and fluff interior with a fork. Spoon turkey and spinach filling into the sweet potato.
  5. 05Top with toasted slivered almonds and serve hot.
