  • 139.4 g White long-grain rice, cooked
  • 63.4 g Carrots, finely diced
  • 41.2 g Sweet Pickle Relish
  • 43.7 g Hard-boiled egg
  • 25.3 g Spinach, wilted
  • 13.1 g Olive Oil (for glazing/binding)
Method
  1. 01In a large bowl, combine the ground turkey, finely diced carrots, sweet pickle relish, and a pinch of salt and pepper. Mix until the mixture is tacky and well-distributed.
  2. 02Shape the mixture into a tight log on a sheet of foil, placing the sliced hard-boiled egg in the center as you roll.
  3. 03Wrap the foil securely, twisting the ends like a candy wrapper to ensure it holds its shape during cooking.
  4. 04Place the log in a steamer basket over boiling water and steam for 35-40 minutes, or until the meat is firm and cooked through to an internal temperature of 165 deg F (74 deg C).
  5. 05Remove from the steamer, carefully unwrap, and lightly brush with olive oil. Place under a broiler for 2-3 minutes just to achieve a golden, savory crust.
  6. 06Serve the Embutido sliced into thick rounds, accompanied by a generous portion of fluffy white rice and a side of quick-wilted spinach to balance the sweetness of the pickles.
