Braised Seitan and Leek Tagine with Toasted Pumpkin Seeds

Ingredients
- 250 g seitan
- 115 g yam
- 100 g leek
- 1 tbsp olive oil
- 1 tsp za'atar
- 2 each cardamom
- 1 cup vegetable broth
- 0.5 tsp salt
- 32.2 g pumpkin seeds
- 2 sprig flat-leaf parsley
Method
- 01In a heavy tagine or Dutch oven, heat olive oil over medium heat. Add sliced leeks and cook until soft and fragrant, about 5 minutes.
- 02Add cubed seitan and diced yams. Stir in za'atar, crushed cardamom pods, and salt, roasting spices briefly for 1 minute until fragrant.
- 03Pour in vegetable broth to just cover ingredients. Bring to a simmer, then cover tightly and lower heat.
- 04Braise gently for 30-35 minutes until yams are fork-tender and seitan has absorbed flavor.
- 05Uncover for final 5 minutes of simmering to allow cooking liquid to thicken into a light glaze.
- 06Serve hot in a bowl topped with toasted pumpkin seeds and chopped fresh flat-leaf parsley.
