Cajun-Style Blackened Atlantic Salmon 'Bistro' Bites

Ingredients
- 43.4 g Atlantic salmon fillet
- 86.6 g sweet potato
- 37.9 g spinach
- 0.5 clove garlic
- 0.5 tsp Cajun seasoning
- 0.7556 tsp olive oil
- 0.5 tsp lemon juice
Method
- 01Place the diced sweet potato in a small non-stick pan with olive oil and a tablespoon of water. Cover and steam-sauté over medium-high heat for 6-8 minutes until tender.
- 02Remove the lid, add the minced garlic, and cook for 1 minute until the garlic is fragrant and the potatoes are lightly browned.
- 03Toss the salmon cubes thoroughly with 1.5 g of the Cajun seasoning until evenly coated.
- 04Push the sweet potatoes to the side of the pan and add the coated salmon cubes. Sear over high heat for about 2 minutes per side until the spices form a dark crust and the fish turns opaque, flaking easily and reaching an internal temperature of 145°F/63°C.
- 05In the final 30 seconds, add the chopped spinach and toss until lightly wilted from residual heat.
- 06Transfer to a small bowl, sprinkle with the remaining 0.6 g Cajun seasoning, squeeze fresh lemon juice over the top, and serve.
