Ingredients
  • 1 Corn Tostada (large, ~6-inch diameter)
  • 2 oz (57 g) Oaxacan Cheese (Quesillo), shredded
  • 1.5 oz (43 g) Roasted Chapulines (Grasshoppers), seasoned
  • 0.25 cup (40 g) Avocado, diced
  • 1 tsp Lime juice
  • 1 tbsp Cilantro, chopped
  • 1 tbsp Salsa Roja (optional, for serving)
  • pinch Salt
  • pinch Black Pepper
Method
  1. 01Lightly toast the corn tostada in a dry skillet over medium heat until slightly crisp, about 1-2 minutes per side. Alternatively, you can warm it in a toaster oven or air fryer.
  2. 02Spread the shredded Oaxacan cheese evenly over the warm tostada, covering it almost to the edges.
  3. 03Sprinkle the seasoned roasted chapulines over the cheese.
  4. 04In a small bowl, gently toss the diced avocado with lime juice, chopped cilantro, salt, and black pepper.
  5. 05Spoon the seasoned avocado mixture over the chapulines and cheese.
  6. 06If desired, top with a tablespoon of salsa roja.
  7. 07Serve immediately as an authentic Mexican snack.
