Ingredients
- 1 Corn Tostada (large, ~6-inch diameter)
- 2 oz (57 g) Oaxacan Cheese (Quesillo), shredded
- 1.5 oz (43 g) Roasted Chapulines (Grasshoppers), seasoned
- 0.25 cup (40 g) Avocado, diced
- 1 tsp Lime juice
- 1 tbsp Cilantro, chopped
- 1 tbsp Salsa Roja (optional, for serving)
- pinch Salt
- pinch Black Pepper
Method
- 01Lightly toast the corn tostada in a dry skillet over medium heat until slightly crisp, about 1-2 minutes per side. Alternatively, you can warm it in a toaster oven or air fryer.
- 02Spread the shredded Oaxacan cheese evenly over the warm tostada, covering it almost to the edges.
- 03Sprinkle the seasoned roasted chapulines over the cheese.
- 04In a small bowl, gently toss the diced avocado with lime juice, chopped cilantro, salt, and black pepper.
- 05Spoon the seasoned avocado mixture over the chapulines and cheese.
- 06If desired, top with a tablespoon of salsa roja.
- 07Serve immediately as an authentic Mexican snack.
