Ginger-Soy Glazed Turkey and Broccoli Stir-Fry with Steamed Jasmine Rice

- 230 g Ground Turkey, 93% lean
- 280 g Broccoli florets, raw
- 210 g Rice, white, long-grain, cooked
Method
- 01Prepare the glaze by whisking together 2 tbsp soy sauce, 1 tbsp grated fresh ginger, 1 tbsp rice vinegar, 1 tbsp honey, and 1 tsp toasted sesame oil in a small bowl.
- 02Heat a large wok or heavy-bottomed skillet over high heat. Add a tiny splash of neutral oil (not counted in macros) and add the ground turkey. Break it up with a wooden spoon and sear until deeply browned and crispy in spots, about 5-6 minutes.
- 03Add the broccoli florets to the pan with 2 tbsp of water, covering briefly to steam until bright green and tender-crisp, about 3 minutes.
- 04Pour the ginger-soy glaze over the turkey and broccoli. Toss vigorously for 1-2 minutes until the sauce reduces, coats the ingredients in a glossy, dark lacquer, and smells aromatic and caramelized.
- 05Serve immediately over the fluffy steamed jasmine rice. Garnish with a pinch of red pepper flakes and sliced green onions for brightness and a hint of heat.
