Moroccan Spiced Cod Tagine with Saffron-Infused Zucchini Noodles

Ingredients
- 33.6 g Atlantic cod fillet
- 359.1 g zucchini
- 1 tsp lemon juice
- 3.2889 tsp olive oil
- 1 clove garlic
- 0.5 tsp ground cumin
- 0.5 tsp ground coriander
- 0.25 tsp ground turmeric
- 1 pinch saffron
- 0.25 tsp salt
- 1 tbsp fresh parsley
Method
- 01Pat the cod fillet dry with paper towels and season both sides lightly with a portion of the salt.
- 02In a small bowl, combine ground cumin, ground coriander, ground turmeric, and saffron threads.
- 03Heat olive oil in a non-stick skillet over medium heat. Add minced garlic and the spice mixture, toasting for 30 seconds until highly aromatic.
- 04Add the spiralized zucchini noodles to the skillet and toss continuously in the spiced oil for 2 to 3 minutes until tender-crisp. Drizzle with lemon juice, season with salt, then push the noodles to one side of the skillet.
- 05Place the cod fillet on the open side of the skillet. Pan-sear for 3 to 4 minutes per side until the exterior is lightly browned and the internal temperature reaches at least 145°F (63°C), flaking easily with a fork.
- 06Transfer the saffron-infused zucchini noodles into a shallow serving bowl, top with the pan-seared cod fillet, and garnish with chopped fresh parsley.
