American-Style Baked Salmon with Old Bay Roasted Sweet Potatoes and Kale

Ingredients
- 50.5 g salmon fillet
- 305 g sweet potato
- 1 tsp Old Bay seasoning
- 50 g kale
- 44 g yellow onion
- 2 clove garlic
- 1.8786 tbsp extra-virgin olive oil
- 0.25 tsp salt
- 0.25 tsp black pepper
Method
- 01Preheat your oven to 400°F (200°C).
- 02On a large baking sheet, toss the cubed sweet potatoes with half of the extra-virgin olive oil, half of the minced garlic, half of the Old Bay seasoning, salt, and black pepper.
- 03Roast the sweet potatoes in the oven for 20 minutes until they begin to soften and turn golden brown at the edges.
- 04Carefully remove the baking sheet from the oven. Push the sweet potatoes to one side, place the salmon fillet in the center, and add the chopped kale and diced yellow onion to the open space.
- 05Drizzle the salmon and kale with the remaining olive oil, season the salmon with the remaining Old Bay seasoning, and sprinkle the remaining minced garlic over the kale.
- 06Return the baking sheet to the oven and roast for an additional 8 to 10 minutes, until the salmon flakes easily with a fork and registers an internal temperature of 145°F (63°C), and the kale is wilted with crispy edges.
- 07Plate the roasted sweet potatoes as a base, top with the baked salmon fillet, and arrange the garlicky kale alongside. Serve hot.
