  • 121.4 g chicken breast
  • 24.3 ml cane vinegar
  • 8.1 ml soy sauce
  • 3 clove garlic
  • 0.5 tsp black peppercorns
  • 1 each bay leaf
  • 41.5 g palm sugar
  • 13.8 g olive oil
  • 107.8 g broccoli
  • 28.7 g jasmine rice
Method
  1. 01Heat olive oil in a skillet over medium-high heat. Add chicken breast pieces and sear for 3–4 minutes until skin is golden brown.
  2. 02Add crushed garlic cloves and whole black peppercorns, sautéing for 1 minute until fragrant.
  3. 03Pour in the cane vinegar, soy sauce, and add the dried bay leaf. Bring to a boil without stirring for 2 minutes to let the vinegar mellow, then reduce heat to a low simmer.
  4. 04Cover and braise for 12–15 minutes until chicken is completely tender and reaches a safe internal temperature of 165°F (74°C).
  5. 05Uncover, stir in the palm sugar, and add the broccoli florets directly into the pan. Simmer uncovered for 3–5 minutes until the sauce reduces into a glossy glaze and the broccoli is tender-crisp.
  6. 06Serve the chicken and glazed broccoli over a bed of steamed jasmine rice, spooning the extra pan reduction over top.
