  • 77.6 g ground turkey
  • 40.9 g quinoa
  • 50 g spinach
  • 0.5 tsp ground allspice
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp labneh
  • 1 tbsp fresh mint
  • 1 tbsp lemon juice
Method
  1. 01Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. 02In a mixing bowl, combine the ground turkey, cooked quinoa, finely chopped raw spinach, ground allspice, salt, and black pepper. Mix thoroughly until tacky and cohesive.
  3. 03Form the turkey mixture into small, bite-sized kibbeh mounds and place them evenly spaced on the prepared baking sheet.
  4. 04Bake for 15 to 18 minutes until the kibbeh bites are lightly browned at the edges and reach an internal temperature of 160°F (71°C).
  5. 05While the bites are baking, whisk together the labneh, chopped fresh mint, and lemon juice in a small bowl until smooth.
  6. 06Serve the warm kibbeh bites with the cool mint labneh dip on the side.
  7. 07Cook the turkey until the turkey reaches an internal temperature of 165°F (74°C) in its thickest part before serving.
