Ingredients
- 40 g green plantain
- 45 g canned black beans
- 2 g garlic
- 1 pinch ground allspice
- 25 g plain nonfat Greek yogurt
- 5 g Scotch Bonnet hot sauce
- 5 ml lime juice
- 1 sprig fresh thyme
Method
- 01Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 02Arrange sliced plantain rounds on the baking tray in a single layer and bake for 15-20 minutes, flipping halfway through, until golden brown and slightly softened.
- 03While plantains bake, prepare the filling by warming mashed black beans, minced garlic, and ground allspice in a small saucepan over low heat for 3-4 minutes until hot.
- 04Whisk together plain nonfat Greek yogurt, fresh lime juice, and Scotch Bonnet hot sauce in a small bowl until smooth to make crema.
- 05Remove baked plantain rounds from the oven. Top each round with a generous dollop of the warm spiced black bean mash.
- 06Drizzle Scotch Bonnet lime crema over each bocadito and garnish with stripped fresh thyme leaves before serving warm.
