  • 62.4 g salmon fillet
  • 0.3864 tsp sesame oil
  • 1 tsp soy sauce
  • 0.5 tsp fresh ginger
  • 0.5 tsp sesame seeds
  • 75 g sweet potato
  • 50 g baby spinach
  • 11.5 g shallots
  • 0.0909 tsp olive oil
Method
  1. 01Toss the salmon cubes with soy sauce, grated fresh ginger, toasted sesame seeds, and half of the sesame oil in a small bowl to marinate briefly.
  2. 02Steam the small sweet potato cubes until fork-tender, about 6 to 8 minutes. Set aside.
  3. 03Heat the remaining sesame oil in a non-stick skillet over medium-high heat. Add minced shallots and sauté for 1 minute until fragrant.
  4. 04Add the marinated salmon bites to the skillet. Sear for 2 to 3 minutes per side until caramelized on the edges, cooked through, and opaque throughout, reaching an internal temperature of at least 145°F (63°C).
  5. 05Reduce heat to medium, add the steamed sweet potato cubes and fresh baby spinach to the skillet. Toss gently for 60 seconds until the spinach is just wilted and coated in the pan juices. Serve immediately.
