  • 7.5318 oz halloumi cheese
  • 1 each red bell pepper
  • 1 each yellow bell pepper
  • 1 each zucchini
  • 2.994 each red onion
  • 1 cup cherry tomatoes
  • 2.1556 tbsp extra-virgin olive oil
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 1 tsp dried oregano
  • 2 tbsp fresh parsley
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Method
  1. 01If using wooden skewers, soak them in water for at least 30 minutes prior to grilling.
  2. 02In a medium bowl, whisk together extra-virgin olive oil, freshly squeezed lemon juice, minced garlic, dried oregano, chopped fresh parsley, salt, and black pepper to make the marinade.
  3. 03Cut halloumi, red bell pepper, yellow bell pepper, and red onion into 1-inch pieces; slice zucchini into half-inch thick rounds.
  4. 04Place halloumi cubes, cut vegetables, and whole cherry tomatoes in a large bowl. Pour marinade over top and gently toss to coat. Let stand at room temperature for 30 minutes to marinate.
  5. 05Thread marinated halloumi and vegetables alternately onto skewers.
  6. 06Preheat grill or grill pan to medium-high heat (400-450°F / 200-230°C) and lightly oil the grates.
  7. 07Grill skewers for 8-12 minutes, turning every 2-3 minutes, until halloumi is warm with dark grill marks and vegetables are tender-crisp and charred at edges. Serve immediately.
