- 42.8 g Sweet potato, steamed and mashed
- 1.2 g Sesame oil
- 7.9 g Scallion, finely sliced
- 0.9 pinch Sea salt and cracked black pepper
Method
- 01Prepare the rice base: Steam the glutinous rice until soft and slightly tacky. Fold in the mashed sweet potato while the rice is warm to create a dense, slightly sweet, and chewy texture. Season with a tiny pinch of salt.
- 02Shape the cake: On a clean surface, shape the rice mixture into a small, thick disc. The goal is a texture that is firm yet springy.
- 03Prepare the pork: Take the cha lua (Vietnamese pork roll) and cut into thin, uniform slices.
- 04Assemble: Brush the surface of the rice disc lightly with sesame oil to prevent sticking and add a nutty aroma. Lay the slices of cha lua over the rice disc.
