Ingredients
  • 47.6 g Glutinous rice, cooked
  • 35.4 g Cha lua (Vietnamese pork roll, sliced)
  • 42.8 g Sweet potato, steamed and mashed
  • 1.2 g Sesame oil
  • 7.9 g Scallion, finely sliced
  • 0.9 pinch Sea salt and cracked black pepper
Method
  1. 01Prepare the rice base: Steam the glutinous rice until soft and slightly tacky. Fold in the mashed sweet potato while the rice is warm to create a dense, slightly sweet, and chewy texture. Season with a tiny pinch of salt.
  2. 02Shape the cake: On a clean surface, shape the rice mixture into a small, thick disc. The goal is a texture that is firm yet springy.
  3. 03Prepare the pork: Take the cha lua (Vietnamese pork roll) and cut into thin, uniform slices.
  4. 04Assemble: Brush the surface of the rice disc lightly with sesame oil to prevent sticking and add a nutty aroma. Lay the slices of cha lua over the rice disc.
  5. 05Garnish: Sprinkle the finely sliced scallions over the pork and finish with a crack of fresh black pepper. Serve warm or at room temperature as a traditional, satisfying Northern Vietnamese snack.
