Ingredients
- 40g FIRM ORGANIC TOFU, FIRM
- 140g Carrots, raw, sliced into matchsticks
- 5g Za'atar seasoning with hyssop, sesame, sumac & thyme
- 2g Oil, avocado
- 5g Fresh ginger, finely grated
- 14g Oats, whole grain, rolled, old fashioned (toasted for crunch)
Method
- 01Preheat your oven to 400 deg F (200 deg C).
- 02Press the tofu between paper towels to remove excess moisture, then cut into bite-sized 1/2-inch cubes.
- 03In a small bowl, toss the tofu with the avocado oil, grated ginger, and a generous dusting of za'atar.
- 04Spread the tofu cubes and the rolled oats on a parchment-lined baking sheet.
- 05Roast for 15-18 minutes until the tofu edges are golden and firm, and the oats have turned fragrant and nutty.
- 06While roasting, prepare the carrot sticks by cutting them into elegant matchsticks.
- 07Remove from the oven and let cool slightly—this will allow the tofu to crisp up further.
- 08Arrange the warm, spice-crusted tofu bites alongside the crunchy carrot matchsticks.
- 09Finish with a squeeze of fresh lemon juice over the entire plate to brighten the earthiness of the za'atar.
- 10Serve immediately while the tofu is still warm.
