Ingredients
  • 134 g Cornish hen
  • 1 tbsp olive oil
  • 90.8 g fava beans
  • 15 g pearled barley
  • 150 g cauliflower
  • 40 g poblano peppers
  • 40 g tomatoes
  • 20 g yellow onion
  • 120 ml chicken broth
  • 1 tsp Aleppo pepper
  • 0.5 tsp salt
Method
  1. 01Preheat oven to 400°F (200°C).
  2. 02Season Cornish hen generously on all sides with salt and half of the Aleppo pepper.
  3. 03Heat olive oil in a small heavy-bottomed oven-proof pot or Dutch oven over medium-high heat. Add hen skin-side down and sear for 4-5 minutes until skin is deeply golden brown. Remove hen and set aside.
  4. 04Add diced yellow onion, poblano pepper, riced cauliflower, and diced tomato to the pan drippings. Sauté for 3 minutes until softened and fragrant.
  5. 05Stir in fava beans and dry pearled barley, tossing for 2 minutes to coat in oil.
  6. 06Pour in chicken broth and scrape up browned bits from the bottom of the pan. Nestle Cornish hen back into the pot.
  7. 07Cover tightly and transfer to oven. Braise for 20 minutes.
  8. 08Uncover pot and bake for an additional 5 minutes to crisp skin, ensuring chicken reaches a safe internal temperature of 165°F (74°C).
  9. 09Plate braised barley, fava, and vegetable mixture into a bowl. Place hen on top and sprinkle remaining Aleppo pepper over the dish before serving.
  10. 10Cook the hen until the hen reaches an internal temperature of 165°F (74°C) in its thickest part before serving.
