  • 148.4 g ground beef
  • 1 tbsp Cajun seasoning
  • 1 tsp extra-virgin olive oil
  • 50 g yellow onion
  • 2 clove garlic
  • 1.9014 cup chickpeas
  • 1 tsp lemon juice
  • 150 g kale
Method
  1. 01In a large cast-iron skillet over medium-high heat, add the extra-virgin olive oil and grass-fed ground beef. Cook, breaking it into small crumbles, for 5-6 minutes until deeply browned and the internal temperature reaches 160°F (71°C).
  2. 02Add the finely diced yellow onion and minced garlic to the skillet. Sauté until the onion is translucent and fragrant, about 3-4 minutes.
  3. 03Stir in the Cajun seasoning, coating the beef and aromatics thoroughly so the spices bloom in the rendered fat.
  4. 04Add the drained chickpeas to the pan. Toss to combine, heating through for 2-3 minutes to absorb the spice blend.
  5. 05Fold in the chopped kale in batches, stirring until the leaves are charred around the edges and wilted, about 2-3 minutes.
  6. 06Remove from heat, drizzle with fresh lemon juice, and serve hot.
