- 1 tbsp Cajun seasoning
- 1 tsp extra-virgin olive oil
- 50 g yellow onion
- 2 clove garlic
- 1.9014 cup chickpeas
- 1 tsp lemon juice
- 150 g kale
Method
- 01In a large cast-iron skillet over medium-high heat, add the extra-virgin olive oil and grass-fed ground beef. Cook, breaking it into small crumbles, for 5-6 minutes until deeply browned and the internal temperature reaches 160°F (71°C).
- 02Add the finely diced yellow onion and minced garlic to the skillet. Sauté until the onion is translucent and fragrant, about 3-4 minutes.
- 03Stir in the Cajun seasoning, coating the beef and aromatics thoroughly so the spices bloom in the rendered fat.
- 04Add the drained chickpeas to the pan. Toss to combine, heating through for 2-3 minutes to absorb the spice blend.
- 05Fold in the chopped kale in batches, stirring until the leaves are charred around the edges and wilted, about 2-3 minutes.
- 06Remove from heat, drizzle with fresh lemon juice, and serve hot.
