Ingredients
  • 70g Beef, grass-fed, ground, raw
  • 80g Onions, raw
  • 90g Endive, raw (used as boats)
  • 5g Cajun Seasoning (for smoky depth)
  • 5g Garlic, raw, minced
  • 15g Lime juice (freshly squeezed)
  • 0.3g Olive oil
Method
  1. 01In a preheated non-stick skillet over medium-high heat, add a light mist of olive oil and brown the ground beef. Break it apart with a spatula until it is deeply seared and crispy.
  2. 02Add the minced onions and garlic. Sauté until the onions are translucent and slightly charred at the edges, absorbing the beef fat.
  3. 03Sprinkle the Cajun seasoning over the mixture, tossing constantly to bloom the spices and create a smoky aroma.
  4. 04Remove from heat and stir in the fresh lime juice immediately to deglaze the pan and add the essential bright acidity typical of Filipino sisig.
  5. 05Separate the endive leaves and arrange them like small cups on a serving plate.
  6. 06Spoon a generous portion of the savory beef mixture into each endive boat. Serve immediately while warm, ensuring the crunch of the endive contrasts with the tender, seasoned beef.
