  • 4 oz chicken breast
  • 2 oz halloumi cheese
  • 3 oz cherry tomatoes
  • 1 oz red onion
  • 2 tbsp lemon juice
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp fresh parsley
  • 1 tsp fresh mint
  • 1 clove garlic
  • 0.5 tsp dried oregano
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 2 oz cucumber
  • 1 oz whole-wheat pita bread
Method
  1. 01In a medium bowl, whisk together the lemon juice, extra-virgin olive oil, chopped parsley, chopped mint, minced garlic, dried oregano, salt, and black pepper to form the marinade.
  2. 02Add the cubed chicken breast and halloumi cheese to the marinade and toss to coat evenly. Allow to marinate for 30 minutes at room temperature (or up to 2 hours chilled).
  3. 03If using wooden skewers, soak them in water for at least 30 minutes prior to grilling.
  4. 04Thread the marinated chicken, halloumi cheese, cherry tomatoes, and red onion wedges onto the skewers, alternating the items.
  5. 05Preheat a grill or grill pan over medium-high heat (around 400°F / 200°C).
  6. 06Grill the skewers for 8 to 12 minutes, turning periodically, until the halloumi is golden brown and the chicken reaches a safe internal temperature of 165°F (74°C) measured with an instant-read thermometer.
  7. 07In a small bowl, toss the cucumber chunks with a pinch of salt.
  8. 08Serve the skewers hot alongside the cucumber salad and whole-wheat pita bread wedges.
