Ingredients
- 4 oz chicken breast
- 2 oz halloumi cheese
- 3 oz cherry tomatoes
- 1 oz red onion
- 2 tbsp lemon juice
- 1 tbsp extra-virgin olive oil
- 1 tbsp fresh parsley
- 1 tsp fresh mint
- 1 clove garlic
- 0.5 tsp dried oregano
- 0.25 tsp salt
- 0.25 tsp black pepper
- 2 oz cucumber
- 1 oz whole-wheat pita bread
Method
- 01In a medium bowl, whisk together the lemon juice, extra-virgin olive oil, chopped parsley, chopped mint, minced garlic, dried oregano, salt, and black pepper to form the marinade.
- 02Add the cubed chicken breast and halloumi cheese to the marinade and toss to coat evenly. Allow to marinate for 30 minutes at room temperature (or up to 2 hours chilled).
- 03If using wooden skewers, soak them in water for at least 30 minutes prior to grilling.
- 04Thread the marinated chicken, halloumi cheese, cherry tomatoes, and red onion wedges onto the skewers, alternating the items.
- 05Preheat a grill or grill pan over medium-high heat (around 400°F / 200°C).
- 06Grill the skewers for 8 to 12 minutes, turning periodically, until the halloumi is golden brown and the chicken reaches a safe internal temperature of 165°F (74°C) measured with an instant-read thermometer.
- 07In a small bowl, toss the cucumber chunks with a pinch of salt.
- 08Serve the skewers hot alongside the cucumber salad and whole-wheat pita bread wedges.
