Ingredients
  • 255 g chicken breast
  • 2 tbsp whole milk yogurt
  • 3 clove garlic
  • 2 tbsp lemon juice
  • 1 tsp tomato paste
  • 1 tsp ground sumac
  • 0.5357 tbsp olive oil
  • 0.5 tsp salt
  • 0.3726 cup long grain white rice
  • 1 tbsp fresh parsley
  • 1 each green bell pepper
  • 1 cup broccoli florets
  • 1 tbsp toum
Method
  1. 01In a bowl, combine yogurt, 2 minced garlic cloves, 1 tbsp lemon juice, tomato paste, 1/2 tsp sumac, 1 tsp olive oil, and salt. Add cubed chicken breast, toss to coat, and marinate for at least 30 minutes in the refrigerator.
  2. 02Rinse white rice and cook with 2/3 cup water until fluffy; toss with remaining 1 tbsp lemon juice and chopped parsley.
  3. 03Steam broccoli florets over boiling water for 4-5 minutes until tender-crisp and bright green.
  4. 04Thread marinated chicken cubes and green bell pepper pieces onto skewers. Brush skewers with remaining 2 tsp olive oil.
  5. 05Grill skewers over medium-high heat for 10-12 minutes, turning occasionally, until chicken is charred on the outside and internal temperature reaches 165°F (74°C).
  6. 06Serve chicken skewers over warm lemon-parsley rice alongside steamed broccoli.
  7. 07Serve with a side of toum and dust vegetables and chicken with remaining 1/2 tsp sumac.
