Gyudon (Simmered Beef and Onion Bowl)

Ingredients
- 143.8 g Thinly-sliced beef chuck, shaved
- 241.4 g White, long-grain rice, cooked
- 139.3 g Yellow onion, thinly sliced
- 27.9 ml Mirin and soy sauce blend (for simmering)
Method
- 01In a small donabe or shallow saucepan, bring 1/2 cup of dashi (or water with a splash of soy sauce) to a simmer. Add 2 tablespoons of mirin, 1 tablespoon of sugar, and 2 tablespoons of soy sauce.
- 02Add the thinly sliced onions to the liquid and simmer over medium heat for 3-4 minutes until translucent and soft.
- 03Add the thinly shaved beef in a single layer. Do not over-stir; let it poach gently in the simmering dashi liquid for 2-3 minutes until just cooked through and tender.
- 04Meanwhile, prepare a bowl of fluffy, steamed white rice.
- 05Once the beef is cooked, use a slotted spoon to lift the beef and onions from the poaching liquid and arrange them elegantly over the steaming rice.
- 06Drizzle a few spoonfuls of the reduced cooking liquid over the top to season the rice.
- 07Finish with a mound of pickled ginger (beni shoga) for contrast and a sprinkle of finely sliced scallions. Serve immediately while the steam carries the aroma of soy and sweet onion.
